- 2 ¼ pounds Roma tomatoes, halved lengthwise
- 1 ¼ pounds cherry tomatoes
- 4 ½ tablespoons Calivirgin Bountiful Basil Olive Oil
- Salt and black pepper, to taste
- 8 cloves garlic, peeled
- 2 small yellow onions, sliced
- 2 cups lightly packed fresh basil, divided
- 5 cups low-sodium vegetable broth
- Preheat oven to 425°F. Place Roma tomatoes on a baking sheet and toss with 3 tablespoons of Calivirgin Bountiful Basil Olive Oil. Season with salt and pepper.
- Place onion slices and garlic on a half sheet and toss with remaining 1 ½ tablespoons Calivirgin Bountiful Basil Olive Oil, sprinkle with salt and pepper.
- Place tomatoes, onions, and garlic in the oven on separate sheets. Roast garlic for 15 minutes and remove, roast onions for 30–35 minutes and remove, and roast tomatoes for 40–45 minutes and remove.
- Pour roasted tomatoes, onions, and garlic into a large pot. Add vegetable broth and basil. Season with salt and pepper.
- Bring to a boil, cover, then reduce heat and simmer for 20 minutes.
- Blend soup with an immersion blender or in small batches in a blender.
- Serve warm with grilled cheese. Enjoy!
