Tomato Feta Salad

Made with our Lodi Olive Oil Koroneiki

Servings: 2-3   |   Prep Time: 15 min   |   Total Time: 15 min

Salad:

  • 2 cups kale, chopped
  • 2 cups spinach
  • 1 ½ cups cucumber, diced
  • 1 cup cherry tomatoes, quartered
  • ½ cup Kalamata olives
  • ½ cup feta cheese, cubed

Dressing:

  1. Combine the dressing ingredients in a bowl. Give it a good whisk.
  2. Add kale, spinach, cucumber, tomatoes, olives, feta cheese, salt, and black pepper to a large bowl.
  3. Toss them together. Pour in as much dressing as desired and toss some more.
  4. Serve and enjoy!
