Salad:
- 2 cups kale, chopped
- 2 cups spinach
- 1 ½ cups cucumber, diced
- 1 cup cherry tomatoes, quartered
- ½ cup Kalamata olives
- ½ cup feta cheese, cubed
Dressing:
- ¼ cup Calivinegar Red Wine Vinegar
- ½ cup Lodi Olive Oil Koroneiki
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Combine the dressing ingredients in a bowl. Give it a good whisk.
- Add kale, spinach, cucumber, tomatoes, olives, feta cheese, salt, and black pepper to a large bowl.
- Toss them together. Pour in as much dressing as desired and toss some more.
- Serve and enjoy!
