Strawberry Tiramisu

  • 1 ½ cups ladyfinger biscuits
  • 4 large egg yolks
  • 4 large egg whites
  • 2 ⅔ cups mascarpone cheese
  • 4 oz icing sugar
  • ½ tsp vanilla paste
  •  cup strawberry jam
  • 3 cups fresh strawberries
  • 2 teaspoons Calivinegar Strawberry Balsamic Vinegar
  • 12 ounces water

Preparing the Syrup

  1. In a small bowl, mix the strawberry jam with Calivinegar Strawberry Balsamic Vinegar, and water, and to create the syrup for soaking the ladyfinger biscuits.
  2. Wash and hull the fresh strawberries. Set aside a few for garnishing and chop the rest into small pieces, keeping them separated.

Preparing the Mascarpone Filling

  1. In a medium-sized bowl, combine half of the icing sugar and the egg yolks.
  2. Place the bowl over a saucepan of gently simmering water, ensuring that the water does not touch the bottom of the bowl.
  3. Whisk the icing sugar and egg yolks vigorously for about 3 minutes, or until they double in size and the mixture becomes foamy and light. Using a hand mixer is suggested for this step.
  4. Remove the bowl from the heat, continue whisking for a few more minutes, and let it cool to room temperature.
  5. Add the mascarpone cheese to the egg yolk mixture.
  6. Gently fold it in using a hand whisk, avoiding the use of an electric hand mixer to prevent over-whipping the mascarpone cheese. Set the mixture aside.
  7. In a separate bowl, whisk the egg whites with the remaining half of the icing sugar until stiff peaks form. Ensure the bowl is dry and clean, with no trace of egg yolk.
  8. Combine the stiffened egg whites and ¾ of the chopped strawberries with the mascarpone mixture. Use a silicone spatula to gently fold the ingredients from the bottom to the top until smooth and creamy.

Assembling the Strawberry Tiramisu

  1. Quickly dip the ladyfingers into the balsamic mixture and arrange half of them on the bottom of a 14" x 9.5" rectangular ceramic or glass dish.
  2. Spoon half of the mascarpone filling over the first layer of ladyfingers and spread it evenly.
  3. Dip the remaining ladyfingers very quickly into the liqueur mixture and arrange a second layer over the mascarpone filling.
  4. Spread the remaining mascarpone mixture evenly over the ladyfingers using a spoon.
  5. Cover the dish with cling film and let it rest in the fridge overnight or for 10-12 hours before serving.
  6. Just before serving, garnish the tiramisu with additional sliced strawberries. Enjoy!
