  • Rice paper wrappers
  • Vermicelli noodles, cooked and drained
  • Shredded carrots
  • Red cabbage, thinly sliced
  • Lettuce leaves
  • Cucumber and bell pepper, julienned
  • Lime wedges, for serving
  • 2 tablespoons Calivirgin Serrano Olive Oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  1. Soak rice paper wrappers in warm water until soft, about 15 seconds.
  2. Place a small portion of noodles and vegetables in the center of the wrapper.
  3. Fold in the sides, then roll tightly into a cylinder. Repeat with remaining ingredients.
  4. In a small bowl, whisk together the Calivirgin Serrano Olive Oil, soy sauce, rice vinegar, lime juice, honey, garlic, and ginger.
  5. Arrange the spring rolls on a platter with lime wedges. Serve with the serrano dipping sauce on the side!
