- Rice paper wrappers
- Vermicelli noodles, cooked and drained
- Shredded carrots
- Red cabbage, thinly sliced
- Lettuce leaves
- Cucumber and bell pepper, julienned
- Lime wedges, for serving
- 2 tablespoons Calivirgin Serrano Olive Oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, grated
- Soak rice paper wrappers in warm water until soft, about 15 seconds.
- Place a small portion of noodles and vegetables in the center of the wrapper.
- Fold in the sides, then roll tightly into a cylinder. Repeat with remaining ingredients.
- In a small bowl, whisk together the Calivirgin Serrano Olive Oil, soy sauce, rice vinegar, lime juice, honey, garlic, and ginger.
- Arrange the spring rolls on a platter with lime wedges. Serve with the serrano dipping sauce on the side!
