- 2 pounds Yukon Gold potatoes
- 3 tablespoons Calivirgin Rustic Rosemary Olive Oil
- 1 teaspoon salt
- ½ teaspoon pepper
- Place the potatoes in a saucepan and cover with cool water. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
- Drain the potatoes and transfer them to a bowl. Toss with 2 tablespoons of Calivirgin Rustic Rosemary Olive Oil, salt, and pepper.
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Arrange the potatoes on the baking sheet and gently smash each one with the bottom of a heavy glass.
- Drizzle the remaining 1 tablespoon of Calivirgin Rustic Rosemary Olive Oil over the potatoes.
- Roast for 20 minutes, or until crispy and golden brown.
- Serve warm and enjoy!
