Smashed Potatoes

Made with our Calivirgin Rustic Rosemary Olive Oil

Crispy smashed potatoes with herbs and spices on parchment paper.

Servings: 4-6   |   Prep Time: 40 min   |   Total Time: 45 min

  1. Place the potatoes in a saucepan and cover with cool water. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
  2. Drain the potatoes and transfer them to a bowl. Toss with 2 tablespoons of Calivirgin Rustic Rosemary Olive Oil, salt, and pepper.
  3. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  4. Arrange the potatoes on the baking sheet and gently smash each one with the bottom of a heavy glass.
  5. Drizzle the remaining 1 tablespoon of Calivirgin Rustic Rosemary Olive Oil over the potatoes.
  6. Roast for 20 minutes, or until crispy and golden brown.
  7. Serve warm and enjoy!
