Roasted Cauliflower

Made with our Calivirgin Hot Virgin Jalapeño Olive Oil

  • 1 head of Cauliflower
  • Lemon zest, to taste
  • 1 cup cilantro, chopped
  • 2 teaspoons capers, chopped
  • 1 jalapeño, chopped
  • 3 tablespoons Calivirgin Hot Virgin Jalapeño Olive Oil
  • Salt and pepper, to taste
  • Salsa verde, for topping
  1. Preheat oven to 425°F.
  2. Cut cauliflower into florets; toss on a large rimmed baking sheet and drizzle with Calivirgin Hot Virgin Jalapeño Olive Oil. Season with salt and pepper.
  3. Roast, tossing occasionally, until golden, about 30-40 minutes.
  4. In a bowl, combine cilantro, jalapeño, capers, and lemon zest.
  5. Toss to mix cilantro mixture with cauliflower.
  6. Top with salsa verde and enjoy!
