- 1 head of Cauliflower
 - Lemon zest, to taste
 - 1 cup cilantro, chopped
 - 2 teaspoons capers, chopped
 - 1 jalapeño, chopped
 - 3 tablespoons Calivirgin Hot Virgin Jalapeño Olive Oil
 - Salt and pepper, to taste
 - Salsa verde, for topping
 
- Preheat oven to 425°F.
 - Cut cauliflower into florets; toss on a large rimmed baking sheet and drizzle with Calivirgin Hot Virgin Jalapeño Olive Oil. Season with salt and pepper.
 - Roast, tossing occasionally, until golden, about 30-40 minutes.
 - In a bowl, combine cilantro, jalapeño, capers, and lemon zest.
 - Toss to mix cilantro mixture with cauliflower.
 - Top with salsa verde and enjoy!
