- 3 pounds seedless watermelon, cubed
- 1 tablespoon lemon juice
- ¼ cup fresh basil, roughly chopped
- 3 tablespoons Calivirgin Bountiful Basil Olive Oil
- Kosher salt and freshly ground black pepper, to taste
- 4 ounces feta cheese
- Calivinegar Very Berry Ginger Balsamic Vinegar for drizzling
- Cut rind from the watermelon, then chop the fruit into 1 inch chunks. Place chunks in a colander to drain as your chop.
- In a small bowl, whisk together Calivirgin Bountiful Basil Olive Oil, fresh lemon juice, salt, and black pepper to create a dressing.
- Place watermelon in a large salad bowl. Pour dressing and chopped basil over the watermelon and toss gently to coat. Pour the crumbled feta into the salad bowl and stir gently to integrate the cheese into the salad.
- Drizzle Calivinegar Very Berry Ginger Balsamic Vinegar and serve.
