Lemon Poppy Doughnuts

Made with our Calivirgin Lusty Lemon Olive Oil

Doughnuts:

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon poppy seeds
  • Pinch of salt
  • ½ cup greek yogurt
  • ½ cup honey
  • 2 eggs, lightly beaten
  • 2 tablespoons Calivirgin Lusty Lemon Olive Oil
  • 2 tablespoons milk
  • ¼ cup lemon juice
  • 2 tablespoons lemon zest

Lemon Glaze

  • 1 cup confectioners’ sugar
  • 3 tablespoons lemon juice
  • Optional: yellow food coloring
  1. Preheat the oven to 425°F, and grease a 6-cavity doughnut pan. In a large bowl, whisk together the flour, baking powder, poppy seeds and salt. Set aside.
  2. In a smaller bowl, whisk together the greek yogurt, honey, eggs, olive oil, milk, lemon juice, and lemon zest. Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon until combined.
  3. Pipe or spoon the doughnut batter into the doughnut pan, filling each cavity almost to the top. Bake at 425°F for 12-14 minutes. Let cool in the pan for 5 minutes, then transfer the doughnuts to a cooling rack. Use the remaining dough to fill the doughnut pan to make 6 more doughnuts.
  4. Add all glaze ingredients to a small bowl and whisk together. Dip each doughnut into the glaze and let dry on cooling rack.
