Doughnuts:
- 2 cups flour
- 2 teaspoons baking powder
- 1 tablespoon poppy seeds
- Pinch of salt
- ½ cup greek yogurt
- ½ cup honey
- 2 eggs, lightly beaten
- 2 tablespoons Calivirgin Lusty Lemon Olive Oil
- 2 tablespoons milk
- ¼ cup lemon juice
- 2 tablespoons lemon zest
Lemon Glaze
- 1 cup confectioners’ sugar
- 3 tablespoons lemon juice
- Optional: yellow food coloring
- Preheat the oven to 425°F, and grease a 6-cavity doughnut pan. In a large bowl, whisk together the flour, baking powder, poppy seeds and salt. Set aside.
- In a smaller bowl, whisk together the greek yogurt, honey, eggs, olive oil, milk, lemon juice, and lemon zest. Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon until combined.
- Pipe or spoon the doughnut batter into the doughnut pan, filling each cavity almost to the top. Bake at 425°F for 12-14 minutes. Let cool in the pan for 5 minutes, then transfer the doughnuts to a cooling rack. Use the remaining dough to fill the doughnut pan to make 6 more doughnuts.
- Add all glaze ingredients to a small bowl and whisk together. Dip each doughnut into the glaze and let dry on cooling rack.
