Cacio e Pepe

Made with our Calivirgin Premium Extra Virgin Olive Oil

  • 6 ounces spaghetti or bucatini pasta
  • 2 tablespoons Calivirgin Olio Nuovo or Premium Extra Virgin Olive Oil
  • ½ tablespoon freshly cracked black pepper
  • ¾ cup Pecorino Romano cheese, grated
  • Kosher salt, for pasta water
  1. Cook pasta according to package instructions, until al dente. Drain, reserving ¾ cup of the pasta water.
  2. In a 12-inch, heavy-bottomed sauté pan, heat Calivirgin Olio Nuovo or Premium Extra Virgin Olive Oil over medium heat. Add cracked black pepper and toast, swirling until fragrant.
  3. Pour in ½ cup of the reserved pasta water and bring to a simmer. Add the pasta and pecorino romano, tossing until the cheese melts and the pasta is coated in the sauce.
  4. Continue cooking until the pasta is tender, adding more pasta water if needed to keep it saucy. Enjoy!
