- 6 ounces spaghetti or bucatini pasta
- 2 tablespoons Calivirgin Olio Nuovo or Premium Extra Virgin Olive Oil
- ½ tablespoon freshly cracked black pepper
- ¾ cup Pecorino Romano cheese, grated
- Kosher salt, for pasta water
- Cook pasta according to package instructions, until al dente. Drain, reserving ¾ cup of the pasta water.
- In a 12-inch, heavy-bottomed sauté pan, heat Calivirgin Olio Nuovo or Premium Extra Virgin Olive Oil over medium heat. Add cracked black pepper and toast, swirling until fragrant.
- Pour in ½ cup of the reserved pasta water and bring to a simmer. Add the pasta and pecorino romano, tossing until the cheese melts and the pasta is coated in the sauce.
- Continue cooking until the pasta is tender, adding more pasta water if needed to keep it saucy. Enjoy!
