- 1 8 ounce package beets, sliced
- 3 tablespoons Lodi Olive Oil Ascolano
- 3 basil leaves, finely chopped
- 1 tablespoon Calivinegar Prosecco White Wine Vinegar
- ¼ cup feta cheese crumbles
- Microgreens, for topping
- Salt, to taste
- Stir together Lodi Olive Oil Ascolano, Calivinegar Prosecco White Wine Vinegar, and basil in a small bowl until well combined (note: you can also use a blender).
- Arrange the beet slices on a place or cheese board and top with feta cheese, micro greens, and fresh cracked pepper. Drizzle with Lodi Olive Oil Ascolano and serve.
