Gravy is for Thanksgiving. Olive Oil topped mashed potatoes are for the rest of the year!
1 ½ lbs potatoes (red, russet or yukon gold), quartered length wise
5 tbsp. milk
2 tbsp. Calivirgin Hot Virgin Jalapeño Olive Oil, Jalapeno Garlic Olive Oil or Guilty Garlic Olive Oil
sea salt and pepper to taste
Place potatoes in pot of salted water.
Bring to a boil and then reduce heat and simmer 10-15 minutes or until fork tender.
Drain water and return potatoes to pot.
Add milk, Calivirgin Hot Virgin Jalapeño Olive Oil, salt and pepper and mash together with potato masher or wooden spoon.
Continue adding milk to achieve desired consistency.
Additions: Want more heat? Drizzle Calivirgin Hot Virgin Jalapeño Olive Oil over the top of your finished potatoes.
Turn these into loaded mashed potatoes by adding chopped bacon, cheddar cheese, sour cream and chives.
